As part of a new ordinance in Hennepin County, Minn., thousands of businesses that produce more than 1 ton of trash every week will be mandated to begin composting and recycling their food waste by 2020. Businesses must be compliant by January 1, 2020, as health inspectors and other county officials will begin enforcing the ordinance next year…The businesses that will be impacted by this composting mandate are some of the biggest food waste producers out there– restaurants, grocery stores and big hotels like the Hilton downtown– where thousands of meals can be produced on any given day.
